Some of the best stories don't begin in kitchens.
They begin at nursery gates.
A few years ago, I met Paolo Ambrosino and Gianluca Forgione through our children. Our boys became the best of friends, and before long, so did our friendship. Through Paolo, I met Nick, and what started as conversations during school drop-offs slowly turned into conversations about food, family, memories and the traditions that shape us.
One thing became immediately clear...
Italians don't just cook food. They live it.
Food is how they celebrate. How they comfort. How they show love. How they preserve generations of family history. Every region has its own story, every grandmother has her own recipe, and every dish carries an enormous sense of pride.
As a chef, I have always believed that if you're going to honour another country's cuisine, you do it with humility and respect.
So there was never any question of creating an Italian tasting menu without proud Italians standing beside me.
On 18th September, Paolo, Gianluca, Nick and I invite you to experience Italy through the dishes that have shaped generations.
You'll tear into warm focaccia dipped in fragrant extra virgin olive oil and balsamic before enjoying a delicate pairing of pear, Gorgonzola and walnut. We'll travel to Sicily with cured mackerel, fennel, blood orange and caviar, then to Rome with our interpretation of Tortelloni Cacio e Pepe, where aged Pecorino, Parmigiano and black pepper remind us that the simplest ingredients often create the greatest dishes.
The coastline awaits with charcoal octopus, cannellini beans and preserved lemon, before we head north to Piedmont for Barolo-braised ox cheek, slow-cooked until it simply melts away. And finally, we finish on the island of Capri with a contemporary take on Torta Caprese al Limone, chocolate, lemon, almond and olive oil in perfect harmony.
This isn't about reinventing Italy.
It's about celebrating it.
